The peppers will strengthen in hotness depending on the weather, and watering conditions. The HOT variety are acquired from receiving less water during the growing season. The fresh Pods are roasted on open grills upon picking, and then air dried and packed. The aroma of the Peppers roasting, permeate the air during the short season of harvest. During the roasting period they are roasted for you right outside the local grocery store.
